Lots of Lovely Cake in London!

Who doesn’t love looking at cake, eating cake and visiting cake shops?! A couple of Saturday’s ago I caught the train to London with my sister Lucy and we spent a day ‘researching’ cake parlours and cafes, in other words treating ourselves to many different cakes, pastries and brownies throughout the day….

If you like patisserie, cake and generally have a sweet tooth like we do then I think you are going to love this post :-)

Made by Jane’s First Market Stall!

If you follow me on Facebook (and Twitter and Instagram!) you will know that I did my first market stall last weekend selling my cakes and desserts. This was at the Ripon Tastes of Yorkshire Food and Drink Festival on Saturday 14th June.

I absolutely loved it, the best part of it was working with my new business partner my sister Lucy and chatting to the customers about their favourite cakes and what techniques they like to use when baking. We got such lovely feedback and comments about our stall and want to do more markets now, we are on a roll!

The best seller of the day was our new invention, the ‘Multi Millionaire Shortbread’. I have to credit David Jackson for the creation of this ingenious name. David is my sister Lucy’s boyfriend and I can tell you now that I will never hear the end of this! I am surprised he hasn’t patented the name already :-)

Fudgy Chocolate Orange Ganache Cake

I made this cake for my friend’s birthday whose favourite ever chocolate is Terry’s chocolate orange. The sponge is chocolate orange itself, made using a recipe I use time and time again. It includes boiled oranges, which keep the cake so lovely and moist and which also prolongs its life, keeping it fresh for well over a week. It happens also to be gluten free, given the absence of flour and the use of ground almonds in its replacement.

I love making celebration cakes and experimenting with different sized cake tins and fillings. For this cake I used two 15cm/6 inch cake tins, slightly smaller than I would use normally but these made the cake taller, which I think looks really impressive and gives that wow factor.

I made a milk chocolate buttercream to sandwich the two layers together and provide a layer for the dark chocolate and orange ganache to stick to. It was finished with dark and milk chocolate shavings, dark chocolate vermicelli and edible gold sprinkles, to add a shot of colour and lift it.

A great cake for a birthday or a party, it looks really impressive on a cake stand, given its height.

Gooey and Squidgy Peanut Butter Energy Flapjacks

On Sunday 11th May I ran the Leeds Half Marathon in support of Macmillan Cancer Support. The last 3 miles were so hard! I ran the total 13.1 miles with my little sister and between us we raised almost £900 for the charity. We were so pleased with the kindness and generosity of our friends and family :-)

I read up a lot of information about fueling your body for running and decided to make some healthy energy bars, those which are made without refined sugar. These bars contain a healthy mix of protein, essential fats and carbohydrates; perfect fuel for your run and also great for your post-exercise recovery.

Peanut butter is a great ingredient to use as it provides a feeling of fullness much longer after you have eaten it. Full of fat, protein, and fibre, it gives you a slow, sustained release of energy. It does contain fat, but it is the preferred unsaturated fat which is good for your heart.

A Raspberry Heart in Every Slice… Chocolate and Coconut Cake with a Lace Collar

I think this has to be one the prettiest cakes I have made. Each slice contains a beautiful raspberry heart.

The sponge is made with coconut and is deeply chocolatey, with a creamy mousse-like raspberry filling and a white chocolate ganache coating. I melted and piped white and dark chocolate to create the impressive, delicate collar around the outside of the cake.

I have been looking for ways to make the centres of cakes a little different and came across this Wilton Heart Pan Set available from Amazon.

I love being creative and trying out new ideas and concepts and by using their two different shaped tins you create a channel which is used to hold the raspberry buttercream and make the heart shape. Very clever!

Honey-Nut Maple Bars…with a Strawberry Centre

I think I overdid it on eating chocolate and baking with chocolate over Easter! So my next post is chocolate-free, a little lighter and not quite as fancy.

I would say these bars are ‘healthy-ish’! Made of a shortbread style base, they have a strawberry jam middle and are topped with golden toasted nuts and seeds.

They do contain butter but no refined sugar; I have instead used honey, maple syrup and fruit sugar to give them sweetness. Still extra moreish, crunchy, caramelised and full of flavour.

The Ultimate Chocolate Fudge Easter Cake… with a Mini Egg Surprise Centre

I am addicted to surprise centre cakes at the moment so I thought I would try a seriously chocolately one and use up some Mini Eggs from Easter! I love working with chocolate so I also made some chocolate curls and shards for the base and top of the cake, to give it a posh finish :-)

The cake itself is a rich chocolate fudge cake, with dark chocolate buttercream sandwiched between the six layers. The outside of the cake is iced with a decadent chocolate ganache.

The cavity in the middle of the cake is filled with Cadbury’s Mini Eggs. I think the contrast of the colours against the rich ganache and the dark chocolate look really effective.

Surprise Centre Easter Cake… A White Chocolate Dream!

Ahh I think I am getting addicted to making these surprise centre cakes! So I thought I would share with you how I make them.

This really is a showpiece celebration cake, great for Easter, a birthday, wedding, christening or as a gift. To make it look lovely and girly I have topped the cake with giant Milkybar buttons and pink stripe white chocolate panels, along with milk chocolate champagne truffles.

The white chocolate pencils around the outside of the cake give it extra finesse and a professional finish :-)

150 Poker Chip Cupcakes…for a Las Vegas Themed Wedding

Now this was a fun project to do!!

I was asked if I could make some cupcakes decorated with edible poker chips. The happy couple got hitched in Las Vegas and had their wedding party back home at Durham County Cricket Club. They wanted to recreate their Vegas experience at home so they could share it with their friends and family. Such a lovely idea!

I created 150 little poker chips from fondant icing, all hand cut and individually piped with the markings and numbers. It took forever but I am so pleased with the results :-)

The cupcakes were plain sponge and doused in vanilla bean sugar syrup and topped with a light and fluffy vanilla buttercream. Yum!
